Poached Pears

  • 3 ounces Landana® cheese, wafer-thin shavings
  • 2 ripe pears
  • 1-1/2 cups Vermouth
  • 1 Dash Amaretto
  • 3 ounces sugar
  • 2 handfuls of walnuts, roughtly chopped

Peel the pears, cut them down the middle and carefully remove the core. Place the pears with the cut side facing up next to each other in a small pan and pour over enough Vermouth to cover them fully. Add the Amaretto and sugar, bringing it to just below boiling point. Allow the pears to poach on low heat for 10 to 15 minutes. Let the pears cool down in the liquid.

Remove the pears from the liquid, return the pan to the stove and allow the liquid to reduce until it is the consistency of a syrup. Leave and let cool. Place the pears with the cut side down on a chopping board and cut them into slices, but make sure the slices are still connected at the top. Place the pear fans in the middle of 4 dessert plates, pour over a little sauce and garnish with the wafer-thin shavings of cheese. Finally, scatter some roughly chopped walnuts on the plate.
